If there is one thing I am sanctimonious about, it’s meal prep. I like knowing that lunch is accounted for well and truly in advance. So without fail, every weekend, I spend an afternoon making sure 11:30am weekday Anna is confident that a lunch that is nutritious and delicious is imminent. I also don’t like spending $18 on a CBD sandwich, sue me!
This week’s menu is zucchini fritters (the highlight and really the focus of this post) with easy (read: lazy) oven-baked chicken bites, a simple greek salad and a sour cream a chives dipping sauce.
Now if you’re the proud owner of a bento box-style lunch box, this is probably a good time to deploy her. But as you’ll see, I managed just fine without. It does just mean that come time to consume, you’ll need to fish out the chicken and heat it up (unless you’re a psychopath who doesn’t mind eating cold chicken).

The Greek Salad
We’re making 5 portions and this salad is as simple as it comes, and keeps really well over the course of the week. You’ll need:
- 3 large tomatoes cut into rough chunks
- 2 lebanese cucumber cut into rough chunks
- 1 red onion slice thinly
- A bunch of parsley – chopped
- The juice of half a lemon
- Half a block of feta – cubed
- A good glug of olive oil
- Salt and pepper
- A sprinkle of sumac
Combine all of the above in a bowl and season extra to your taste.
Here’s a video, if you’re more visually inclined:
The Chicken Bites
Call me the world’s laziest person and you would be correct, these chicken bites are firm proof of this.
Makes 5 portions:
- 1kg of chicken thigh cut up into bite-sized chunks
- 1/2 cup of plain flour
- 3 tbsp of hot sauce (I used Frank’s Original)
- 1 egg – whisked
- 1 cup of panko bread crumbs
- Salt and pepper
Preheat your oven to 200°C.
In a bowl, mix together the chicken and the flour until coated.
Add in the egg and hot sauce (which you will have whisked together in a smaller bowl).
Add the breadcrumbs, salt and pepper incrementally, making sure you’re coating as much of the chicken as possible. At this point it will be a terrible sticky mess, but trust the process.
Lay out your sticky chicken mess on a baking tray and bake for 14-16 minutes, giving it a halfway toss so that all the sides get a shot and going a bit crispy.

The Sour Cream and Chives dipping sauce
I am a big fan of condiments, so wherever I can add a sauce, I do.
For this one you’ll need:
- 1 tbsp sour cream
- 2 heaped tbsp of Greek yoghurt
- A handful of chives – chopped
- 1 garlic clove – crushed
- A squeeze of lemon juice
- Salt and pepper to taste
Combine the lot and decant into 5 small containers.
And now for the reason we’re all here…

Zucchini Fritters
Ingredients
Method
- Start with the grated zucchini in a sieve and salt liberally, mix the salt through. Let is sit in the sieve for a few minutes before squeezing out as much water from the zucchini as you can with gumption.
- If you have time, caramelise your onion by frying it on low heat in a pan with some olive oil until delicious, soft and brown. This step can take 30 minutes, so definitely optional, the raw onion mixed it will do just fine!
- In a bowl, mix the zucchini in with all the other ingredients.
- In a pan, heat a glug of olive oil and shape the fritter mixture into 5 little patties.
- Fry for 3-5 minutes each side, or until cooked through and golden on the outside.
